Raw Cauliflower Salad with Japanese Dressing


When it’s truly hot outside the thought of eating can be quite unbearable. It’s a chore just to heave yourself away from the air conditioning unit, let alone prepare a meal. Thankfully, this raw cauliflower salad will help keep you nourished and provide you with just enough energy to walk to the shop to buy a ice lolly, or twelve.

1 cup raw cauliflower
1/2 avocado
1/2 cup sliced cucumber
1/2 cup cooked edamame beans (substitute with broad beans or peas if necessary)
2 spring onions
1 cup shredded chicken
1/4 cup sweetcorn
sprinkle of poppy seeds (optional)

25ml sushi vinegar
10ml sesame oil
10ml soy sauce
1/2tsp white sugar


For the dressing simply pour all ingredients into a small bowl and whisk until well combined.

For the salad, divide the raw cauliflower into small florets and combine in a large bowl with the sliced cucumber and spring onions, the cooked edamame, the sweetcorn, avocado and shredded chicken. Sprinkle with poppy seeds and dress.


Delicious additions:

Thin slices of radish

Orange segments

Serving Suggestions:

A hot cup of miso soup.

    • Hi jan – thanks for the comment. I would hesitate to use a white vinegar as it’s quite strongly flavoured – most big supermarkets usually carry a sushi vinegar or mirin in their international sections, but if you can’t find any i would just leave it out and try a different dressing altogether – have a look at my cabbage salad recipe with wafu dressing for an alternative.


  1. This looks so refreshing – and I have found that it is ALL in the cutting. It makes a good salad into a FAB one. Good old cauliflower – I found some baby ones in our market the other day and couldn’t resist getting them….
